Pura Vida Pico

This recipe was born on Easter Sunday in Samara, Costa Rica.  We were having company and Scott put this together as they were arriving.

Chop and mix these together:
3 Ripe yet firm vine ripened tomatoes- seeded
1 small-medium red onion
5 green onions
1 red chile dulce
1 green chile dulce
2 large cloves of garlic, minced
1 cup chopped cilantro
1/2 a lemon of lemon juice

Then add:
1 TB extra virgin olive oil
A GOOD COVERING of salt and pepper
2 ripe, firm avacados, diced

Do not overmix- it will become mushy!

My only other advice is to at least double this recipe- if you don't, a single batch could be gone in 5 minutes!
