Hard Boiled Eggs

Hard boiling eggs is kind of something you do off and on for your whole life...

So this week I decided it was time to stop dropping the eggs in a boiling pot, going to do the laundry and then coming back, merely hoping they were cooked and done right.

There is a science to this.

And with a little investigation, I've gotten it down:

Put eggs in cold water.
Bring pot to a rolling boil.
Turn the heat way down so it is just kind of simmering.
Set the timer for 11 minutes.
When the timer goes off, transfer the eggs to cold water.


VOILA!
The perfect hard boiled egg! Not too hard at all.
It was totally worth it for me to stop guessing and start doing things right around here!

That is the way I do it except I turn the heat off. I always have perfect boiled eggs. Do you know why some eggs peel and some don;t? The reason is old eggs peel and fresh eggs don't. It has nothing to putting them in cold water. All eggs you buy in the store are old enought to peel.

Crazy but I was hit and miss on this simple procedure until I was at least 35! Now I just bring em to a boil from cold, then turn off the heat. Let them stand 10 minutes and put them into cold water just to be able to handle them. Haven't had any problem since.

Yeah this is the way to go. I've done it Mom's way too and it was perfect. Something else I learned, the older the egg (a week or two since purchase) the better it is for hard boiled because it has a bigger air bubble and peels easier.
